2 | tablespoons | cornmeal | |

1 | tablespoon | chili powder | |

2 | teaspoons | ground cumin | |

2 | teaspoons | ground red pepper (cayenne) | |

1 | teaspoon | salt | |

1/2 | teaspoon | paprika | |

1/2 | teaspoon | black pepper | |

3 | tablespoons | cooking oil | |
|
Pat fish dry with paper towels. Cut into 4 serving size pieces; set aside.
In a shallow dish, stir together flour, cornmeal, chili powder, cumin, red pepper, salt, paprika and black pepper. Dip the fish pieces into flour mixture, turning to coat.
In a large skillet, heat the oil over medium heat. Cook fish in oil for 4-6 minutes or until fish flakes easily with a fork, and fillets are golden brown, turning once.
Remove fish from skillet and drain on paper towels.
